Yannick’s amazing Cremant de Bourgogne gives you serious, grower Champagne level quality, at roughly half the price. He produces a tiny amount of sparkling wine from his younger Chardonnay vines. After alcoholic fermentation the wine undergoes secondary ferment in this bottle, for twenty-four months, and is bottled with a scant five grams of residual sugar per liter. What I find so alluring about sparkling wines from the Macon is the exotic, almost tropical note the wines possess, without sacrificing precision.
