Aubert championed the cause for the Aligote grape, explaining that in the village of Bouzeron they grow a superior clone to that used across most of Burgundy. Dubbed Aligote “Doré” this wine shows better aromatics and richness than most examples. The grapes are de-stemmed and put into the press where they sit with the skins for 24-36 hours. The juice is then pressed to wood tanks where it is fermented very slowly at low temperature. Then the wine is aged in older tanks for 10-12 months before bottling.
Although I have not tasted this vintage it is a wine I buy for my own cellar each year so I have a lot of experience. It typically shows notes of fresh kumquat and pineapple, sea salt and white cardamom pods. There is a surprising richness to start then the tell-tale acidity of Aligote that cleans up the finish. Drink 2024-2027.
