Villa Sparina is one of the top estates in the Gavi region of Italy, and this part of the Piedmont has a long history of also producing sparkling wines. To that end they apply the same techniques as the Champagne houses. In the Gavi region the high acid local variety, Cortese, is perfect for producing sparkling wine. At Villa Sparina they also add a small amount of Chardonnay for texture, then ferment it slowly in the bottle for more than three years before disgorging. On the palate it is dry, with a broad texture and generous finish. This is the perfect wine to complement the pre-dinner charcuterie and cheese board, or a fresh batch of stone crab claws.
