Vire-Clesse is one of the unsung appellations of Burgundy, located in the Maconnais growing region a few miles north of the much more famous Pouilly-Fuisse. Originally, the twin communes of Vire and Clesse were part of the Macon-Villages appellation, but were promoted to their own distinct appellation as a recognization of their quality wines and unique limestone-heavy soils. This wine comes to us from Maison Trenel, the Burgundy project of Michel Chapoutier, one of France’s hardest working winemakers. Michel is passionate about biodynamic and traditional viticulture as well as supporting France’s lesser-known appellations, and this wine checks all the boxes. Best of all, it has benefited from a few years of cellar aging!

When you open this wine, you will want to serve it chilled, but not ice cold, in order to get the full range of aromatics. Once you pull the cork this wine delivers notes of yellow apple, lemon tart, apple blossom, hay, and toasted cashew. Drink 2025-2027 with quiche Lorraine, baked salmon or chicken breasts stuffed with goat cheese and roasted red peppers.
