There really is not a more universal favorite right now than Marlborough Sauvignon Blanc, which is also a great choice for a pre-lunch glass or to pair with many seafood and chicken dishes. This new discovery comes from the Wairau Valley sub-zone of Marlborough, from three parcels planted on the different soil types of the area. Most of the soils are varying degrees of silt over gravel, but the depth of the water retaining top layer changes the ripening pattern and yield of the vines. Where many producers in Marlborough harvest their vineyards multiple times to build complexity at Taonga the vines create the same quality but can be harvested just once, at the peak of ripeness. This helps to create a wine that shows all the character of Marlborough you love but without the need for residual sugar to balance the sharp acidity which nearly underripe grapes contribute.

The nose is a delightful combination of Anjou pear, green fig, key lime, passionfruit and tomatillo aromas. On the palate it has nice richness but enough tension to know you are drinking Sauvignon Blanc. Serve with bacon jam deviled eggs, endive filled crab salad or shrimp scampi.
