Originally the Abbey of St. Hilaire began producing this wine 1531, making it the first bottle fermented sparkling wine in France, almost 150 years before Champagne! This wine is produced around the village of Limoux, high in the Pyrenees mountains, near the border of Spain. The dominant grape of the area is Mauzac, which is locally known as Blanquette. Most producers augment the blend with small amounts of Chardonnay and Chenin Blanc, in this case each is used in the final wine. The wine is fermented and aged in bottle for one year and is finished in the brut range of sweetness.
