His white wine is a blend of 70% Sauvignon Blanc and 30% Semillon, sourced from a mix of young and old vines. It displays a much richer and intense aroma than you are probably used to for wines like this, with notes of chamomile, white peach, lemon zest, clementine and honeycomb. On the palate it has impressive concentration and intensity for a white wine, with the fruit forming a rich wave that runs into a long finish.
