There's more to Campania than its famous volcanic coastline. Travel inland from Naples into the hills of Irpinia, and you'll discover a very different landscape, one where cooler temperatures, limestone-rich soils, and ancient grape varieties produce some of Southern Italy's most distinctive white wines.

This is where Fattoria Pagano grows the Greco grapes for its Greco di Tufo DOCG.

Founded by Antonio Pagano in 2001, Fattoria Pagano began as a family effort to revive the historic wines of Campania. Today, Antonio and his son Angelo work across two distinct parts of the region, from the volcanic hills near Carinola to the inland vineyards of Irpinia.

Their Greco vines were planted in 2004 in the hills around Tufo, where clay and limestone soils and elevated vineyards provide excellent conditions for this ancient variety. The grapes are harvested by hand in October, then fermented and aged in temperature-controlled stainless steel tanks. By avoiding oak, the family allows Greco's natural character to take center stage.

And Greco has plenty of character.

Unlike lighter Italian whites that rely primarily on crisp acidity, Greco di Tufo combines freshness with a surprisingly substantial texture. Fattoria Pagano's version offers citrus aromas, a pronounced mineral character, and a distinctive note of bitter almond. The palate is full and flavorful, with lively acidity that gives the wine energy and a lingering, savory finish.

It's an especially interesting choice for Chardonnay drinkers looking to explore Italian whites with more body and texture, but without the influence of oak.

Serve it chilled, but not ice-cold, around 50–54°F. Try it with linguine alle vongole, grilled shrimp with lemon and garlic, seafood risotto, or fresh mozzarella di bufala with tomatoes and basil.
