This is the style of wine that popularized Jumilla as a wine appellation! Due to the region’s sandy soils, this part of Spain is remarkably free from vineyard pests and diseases, meaning that some of the vines here are ancient and produce incredibly concentrated fruit. The trade-off is that the hot climate and low rainfall place their own limitations on what can be grown here. Fortunately, the Monastrell grape excels in just such an environment, and it is on the back of this Mediterranean variety that the region achieved its appellation status.

Much of the fruit used in this wine comes from the estate’s older Monastrell vines. Due to the increased concentration of flavor from these old vines, the winemaking team chooses to ferment and age this wine entirely in stainless steel. When you open this wine, you will want to serve it slightly chilled, around 60 degrees Fahrenheit. Drink with grilled chicken kebabs, Cuban dishes such as ropa vieja, OR chill it down a little more and you will be surprised at just how well it pairs with grilled salmon!
