Passe-Tout-Grains is suddenly a fashionable wine from Burgundy that blends Pinot Noir and Gamay. The name literally means “to pass the time” and is a wine that has been made for decades as something the producers can sell while waiting for their more serious wines to age in the cellar. This wine is a roughly 50/50 blend with the Pinot Noir sourced from the estate’s young vines in the Cote d’Or while the Gamay is from old vines in the Chalonnaise and Beaujolais.
The combination is a knock-out, with fresh red cherry, dried cranberry and apricot notes. This wine does not see any oak so it is fresh and lively with beautiful mid-palate softness and nice length. Serve this with smoked or poached salmon, roast chicken or pork tenderloin.
