Pinot Grigio in Trentino is noticeably different from its lower-altitude cousin in the Veneto, often boasting significantly higher acidity and prevalent mineral notes. Sourced from the villages of Lavis and Gardolo, this Pinot Grigio is grown in alluvial soils close to the River Avisio which imbue it with additional minerality while allowing for optimal ripeness. All growers involved in the production of this wine are certified organic as of the 2020 vintage. After harvest by hand, the grapes undergo gentle pressing in the winery before fermentation in stainless steel. This wine does not complete malolactic conversion, but does spend 5-6 months on the fine lees before bottling for additional weight and complexity.
