Similar to Falanghina, the Aglianico grape is synonymous with volcanic soils, most notably in the regional grand cru of Taurasi. The broad, flat plateau of Sannio produces an easier drinking, less tannic version of this variety, suitable for a wide variety of food pairings. To that end, only 20% of this wine sees any barrel maturation, aged in used French oak for 12 months before bottling. When you open this wine, you will want to decant for half an hour. Once this wine has some time to open up, it delivers notes of cooked black cherry, blackcurrant, damp earth, and pipe tobacco. Drink 2025-2031 with rigatoni with sausage, prosciutto-wrapped asparagus, or any sort of charcuterie.
