The ancient Elbling variety grows primarily in the high reaches of the southern Mosel, on terraced hillsides so steep even goats struggle. It produces delicate, low alcohol wines that are laser focused and austere, for consummate acid freaks only. Hild makes this from a mix of old vines and new plantings. This is the best example we have found.
