The Gregoletto family has been farming in the hills near Valdobbiadene since the late 16th century. Unlike most of their neighbors, who have embraced modernization as the Prosecco industry has exploded in the past 30 years, they have resisted this trend. The vines are farmed using organic viticulture, the harvesting is done by hand, and the secondary fermentation happens in the bottle. This style is called Col Fondo Prosecco, which is similar to a Pet-Nat and has some haziness due to the yeast left in the bottle. Despite coming exclusively from DOCG vineyards (the highest quality), they are not entitled to the designation because they bottle with a crown cap. Their studies show it is a superior closure, so they make this sacrifice for quality.
When serving this wine, you have two choices: keep the bottle still and pour carefully to ensure the wine is as clear as possible, or, before you open it, give it a gentle shake to let the cloudiness build. Fans of hazy IPAs will understand this latter approach. Regardless of the path you choose, this wine bursts with notes of green apple, tangerine, pear, and fresh brioche. It is soft and creamy on the palate with a touch of acidity at the finish. Enjoy it with appetizers, cheese boards, or charcuterie.
