The white Cotes-du-Rhone is composed of three Rhone staple varieties: Viognier, Grenache Blanc, and Roussanne. These grapes are sourced from north-facing vineyards just south of Chateauneuf-du-Pape, and the blend for this wine is quite similar to Guillaume’s Chateauneuf Blanc. After harvest (100% by hand, similar to the rest of the family’s wines) the grapes are brought to the winery and sorted before pressing and fermentation. This wine is fermented, using native yeasts, in stainless steel tanks to preserve the primary fruit characteristics of the Viognier and Roussanne and the high natural acidity of Grenache Blanc. Guillaume further amplifies these flavors by blocking malolactic conversion, keeping the cellar at cooler temperatures while the wine ferments. After 6 months in stainless steel, the wine is then filtered before bottling.

When you open this wine, you will not want to serve it ice cold. I would recommend taking it out of your refrigerator for about 15 minutes before serving. Additionally, this wine will benefit from decanting, similar to the red Cotes-du-Rhone.
