Founded in the 1980s by "Pepe" Enrique Mendoza, this estate was among the first in the hot, arid southeastern region of Spain to adopt organic farming and a low-intervention approach in the cellar. This commitment was no accident; Pepe studied viticulture in Spain, later working as the first Spaniard at a winery in New Zealand and gaining experience in Mendoza, Argentina. Upon establishing his estate in Alicante, Spain, he embraced organic farming, natural yeast fermentation, and minimal cellar intervention. While Pepe remains an active figure, the winemaking is now expertly managed by Sonia Llorente Márquez, who has significantly elevated the quality of production.

This rare white wine is a blend of 80% Sauvignon Blanc and 20% Merseguera, a local variety that adds texture and aromatic complexity, while the Sauvignon Blanc contributes a refreshing backbone of acidity. Served chilled, this wine offers a delightful medley of fresh yellow grapefruit, key lime parfait, lemon verbena, fennel pollen, and fleur de sel. It begins with a crisp and bright texture, gradually revealing a surprising richness in the finish. This refreshing summer white pairs beautifully on its own or complements dishes like asparagus and goat cheese tart or shrimp linguine.
