Macabeu is a white variety grown throughout the autonomous communities of Catalonia and Valencia, often used in the production of Cava and other sparkling wines. This variety grows best on limestone soils, such as those found in the high-altitude Terra Alta region of Catalonia, and the resulting wines have been compared favorably to Sancerre. This is a textbook example with notes of green apple, Meyer lemon peel, and wet stones. Drink now through 2025 with garlic shrimp, Nicoise salad, or grilled salmon.
