Burkin-Wolf is a historic estate in the Phalz region of Germany that produces some of the country’s most revered Riesling wines. However, like so many classic wine regions the climate is a lot warmer than it once was and in the coming decades it may be too hot to grow exceptional examples of this grape. They are experimenting with other grape varieties better suited to warmer weather and this wine is the blend they created to use these varieties. A blend of 50% Riesling, 30% Sauvignon Blanc, and 20% Scheurebe, this is a perfect example of how white grapes can be blended to create a dry, and aromatically interesting wine.

 

When you serve this wine take it out of the refrigerator for a few minutes to slightly warm up and splash in a decanter as well. This helps release the bouquet and within seconds you will fill the room with notes of fresh apple, pink grapefruit, fresh pineapple, magnolia blossoms and lemon grass. This wine is completely dry and there is a lovely interplay between tension and richness that carries for a few seconds into the finish. Serve this with ceviche, pasta Carbonara or baked salmon with an herb crust.
