His Pouilly-Fuissé is produced from vines growing in 10 different plots with the vines older than 50 years. It is fermented and aged in a combination of half stainless steel and the remaining in foudre. The nose is a combination of cooked red apple, honey, tangerine peel and creme brûlée. On the palate it shows impressive ripeness, with integrated acidity and a long sense of fruit.
