Pouy is owned by the Grassa family, who practically invented the dry white wine category of the Côtes de Gascogne. Prior to their efforts most of the wine in this area was so bad that it was only distilled to make Armagnac, a barrel aged spirit similar to Cognac. The Grassa family were one of the first to ferment their grapes using stainless steel, which allowed them to control the temperature. Doing so created a wine that is aromatic and fresh, a total contrast to the oxidized, clunky wines of the past.

Give it a chill, crack the cap and pour a glass. On the palate it is clean, bright and fresh, with the fruit wrapped up with a clean, minerally edge. Drink with crudités or herbed goat cheese spread on toasted baguette slices then drizzled with olive oil.
