What does a 17th-century English pirate have to do with sparkling wine?

Quite a bit, actually. Digby Fine English takes its name from Sir Kenelm Digby, an English philosopher, writer, adventurer, and occasional pirate who is credited with helping develop the strong glass wine bottle in the 1600s. His innovations made it possible to store wine more reliably under pressure, an important development in the history of sparkling wine.

It's a fitting name for a producer helping establish England as a serious contender in the world of traditional-method sparkling wine.

Founded by Trevor Clough and Jason Humphries, Digby takes an unusual approach. Rather than relying on a single estate, the company works with selected vineyards across southern England, including sites in Kent, Sussex, Hampshire, and Dorset. This allows the winemaking team to blend wines from different soils and growing conditions, much as the great Champagne houses have done for generations.

The Non Vintage Brut is a blend of 40% Pinot Noir, 35% Chardonnay, and 25% Pinot Meunier, the same three grapes traditionally associated with Champagne. Pinot Noir contributes body and generous fruit, Chardonnay brings freshness and structure, and Pinot Meunier adds a softer, approachable character.

Made using the traditional method, with secondary fermentation in the bottle, the wine spends extended time aging on its lees. This develops the subtle toasted, nutty character that complements its bright fruit.

Expect aromas of green apple, lemon zest, toasted hazelnut, and freshly baked biscuits. Fine bubbles give the palate a creamy texture, while crisp acidity keeps everything lively. The finish is long and refreshing, with lingering citrus and a pleasantly savory edge.

Serve well chilled with oysters, smoked salmon, or crispy fish and chips. It's also a wonderful introduction to just how accomplished English sparkling wine has become.
