Celery Root, Underripe Pineapple, Lemon Grass, Gravenstein Apples, Meyer Lemon Peel

A mix of sites but mostly Le Cray, only vines 50 years or older. 85% fermented in stainless steel, 15% in 1 year old French oak barrels. If you ever want to see white wine that needs to age a couple of years this is it. On the palate it is restrained like a lion in a cage, with incredible power that is veiled by acidity and minerality.
