The rosé produced by Castell de Sant Pau is predominantly Trepat, a native Catalan grape variety often used in sparkling wine production. Trepat is analogous to a warmer-climate version of Pinot Noir and retains its natural acidity in warm vintages, making it ideal for light-bodied reds and rosé Cava alike. Sourced from high altitude vineyards in the Penedes, this is a blend of 80% Trepat with Garnacha adding color and concentration. This wine is technically a brut nature as it does not see any dosage or added sugar, but refrains from using the designation on the label. Additionally it serves as a perfect accompaniment to prosciutto-wrapped melon, charcuterie with olives, or smoked fish dip.
