This incredible Methode Ancestrale sparkling wine is produced by Etienne Bodet & Maison Bodet-Hérold in honor of their daughter Aerlinn, who was born in 2021. It is produced using old vine Grolleau that grows on an outcropping of ancient limestone south of the town of Anjou. The grapes were gently pressed and the juice fermented in a stainless tank until almost dry, then bottled. It is bright, crunchy and frothy with a wild quality that is slightly kombucha-like mixed with cranberry. Excellent with Asian dishes. Drink 2026.
