Nothing drives me crazier than all of the food columns that are published this year that extol the virtues of pairing Gewürztraminer with the Thanksgiving table. Why? Because it is a clunky, low acid, alcoholic and even tannic white wine that overpowers almost anything you serve it with. However, Riesling, done in a dry style is refreshing and thanks to vivid acidity it brightens flavors not unlike salt. Here you have one that is not only the perfect catch all example but extremely reasonable since it is a liter bottle.

Binz is a 4th generation family producing wines in the famed village of Nackenheim, on the famed red slopes of the Rheinhessen of Germany. This gives Riesling a slightly spicy quality and fruit that is so bright it almost cracks on the palate. Pair this with everything from turkey and ham to salmon or tuna, it can handle it.
