The Bayten wines are sourced from Buitenverwachting, or “Beyond Expectation,” one of South Africa’s oldest continually-operating farms. Originally founded by Simon van Der Stel, first governor of the Dutch Cape Colony, grapes have been produced on this estate since the late 18th century. The farm sits proudly in the heart of Constantia, a high-altitude region cooled by its proximity to the Cape of Good Hope. Since the earliest days of European settlement, Constantia has been famous for the longevity of its dessert wines. However, equally important are the Bordeaux varietals grown in the region, including Cabernet Franc and Sauvignon Blanc, which thrive in Constantia’s granite soils.
2020 was a dry vintage, however, temperatures in South Africa were moderate compared to previous years, largely thanks to increased rainfall in the region. Many other regions in the Western Cape were affected by drought, but Constantia’s altitude and proximity to the Atlantic Ocean and False Bay prevented any heat damage. Winemaker Brad Paton chose to harvest the grapes early to preserve green fruit flavors and prevent over-ripeness, however this wine still delivers the full-bodied characteristics of South African Sauvignon Blanc.
