The blend for the 2019 vintage is 75% Garnacha, 15% Carignan and 10% Syrah, from certified organic farmed vines that are 10-25 years old. The grapes are hand harvested and each component undergoes fermentation individually using wild yeast. Once dry the blend is made and the wine is then aged in 4 months in a mix of French and American oak barrels. When you are ready to serve this wine make sure to decant it for a few minutes to allow the bouquet to blossom.
