The Pouilly-Vinzelles is produced from 50+ year old vines in an area with a higher content of clay in the soil. It is fermented and aged in a combination of older foudre (2000L) and a few barrels. This wine shows notes of lemon buttercream, coriander, lemon grass and persimmons on the nose. The feel on the palate is the richest of the three wines, with gorgeous texture and length.
