Older vines lend additional complexity and concentration to the wines of Chablis, and years ago the Gautherin family made the decision to vinify their 80-year-old parcels as a separate cuvée. This wine is matured in neutral oak barrels and represents a fuller-bodied example of Chablis while retaining its characteristic mineral notes and aromas of peeled apple, lemon drop, wet stones, and shaved almond.
