Matias Michelini is a bit of a rebel in Argentina, at the helm of multiple natural and biodynamic wine projects in Mendoza. He works predominantly with native varieties such as Criolla and Torrontes. In the case of this wine, Matias sources fruit from a single parcel of Criolla, planted in the early 1970s. Fermented and matured in concrete, with minimal extraction, this is a lean, almost Pinot-like example of the variety. Equally at home with grilled salmon and the steak dishes that pair with the region’s more robust wines.
