Spain is experiencing a boom in organic and biodynamic viticulture, particularly in regions that have been marginalized on the export market. Located in Navarra’s Bardenas Reales desert, Azul y Garanza is an organic winery which specializes in old vines, often from abandoned vineyards in the region. When you open this Tempranillo, I recommend decanting for up to half an hour. Once you do, this wine delivers a “fresher” take on this classic Spanish variety. Drink now through 2025 with cheese and charcuterie, vegetable frittata, or pulled pork empanadas.
