"New Zealand native Ant Moore is another winemaker who chooses to produce his wines in an Old World-influenced style. Similar to Ovum's winemaking, Ant chooses to ferment his wines in stainless steel, refrains from aging in new oak, and uses minimal chemical intervention in the vineyard. Most of the fruit for this Estate Pinot Noir comes from the Dillons Vineyard, located in the mountainous Waihopai sub-region. Cooler breezes, clay soils, and minimal rainfall combine to create a wine with great focus that still maintains plenty of natural acidity, a must-have for Pinot Noir. The Brookby Road vineyard, the estate's steepest vine plantings, sees higher temperatures and more sunlight, resulting in a fuller-bodied Pinot. Some fruit from here is blended into the Estate Pinot Noir to enhance its natural berry flavors. After harvest, the fruit from each vineyard is brought to the winery, fermented in separate stainless steel tanks.
